Spiced Rubbed Pork Tenderloin with Cranberry-Grape Compote
Quick, impressive and delicious! Try switching out the pork tenderloin with turkey or chicken. The grapes in the compote help to reduce the sugar content found in traditional cranberry chutneys.


  • 2 small pork tenderloins
  • 1/4 cup olive oil
  • 2 Tbs ground coriander
  • 2 Tbs coarse salt
  • 1 Tbs black pepper
  • 2 tsp dried crushed red pepper
  • 1 tsp ground cumin


1.      Preheat oven to 450. Rub spice rub over two pork tenderloins. Place tenderloin on a rack in a shallow roasting pan. Roast about 20-25 min until meat thermometer reads 150-155.

2.      Let pork stand loosely Covered with foil for about 5-10 minutes.  Slice and serve with Cranberry Grape Compote.


Cranberry Grape Compote
Makes 4 cups


  • 1 12oz package of cranberries – fresh or frozen
  • 3 cups of seedless red grapes
  • 3/4 cup of pure cane sugar
  • 1/8 teaspoon of salt
  • 1/4 cup orange juice
  • 2-3 cinnamon sticks
  • 1/2 tsp ground coriander


  1. In a large saucepan over medium–high, bring cranberries, grapes, sugar, salt, orange juice, cinnamon sticks, coriander and 1/4 cup of water to a boil. Reduce heat and simmer until most of the cranberries have popped and grapes are falling apart, 10-15 minutes.
  2. Remove from heat, add salt and stir to combine. Let cool to room temperature (compote will thicken as it cools). Refrigerate in an airtight container up to 2 weeks.  Serve at room temperature.

Exotic Carrot Salad

Serves 4


  • 2 cups grated carrots
  • ¼ cup shredded coconut
  • ¼ cup slivered or sliced almonds, raw or toasted


  • 1/4 cup grape seed mayonnaise (Vegenaise) or regular mayo if you can’t find
  • 1 Tbs lime juice
  • 1 Tbs honey or brown rice syrup
  • Grated fresh ginger, to taste
  • Fresh cilantro, chopped, to taste
  • Pinch salt

Simply mix together salad ingredients and toss with dressing.
