Kale Pie for St Patrick’s Day

March 15, 2015 By Denise Costello

kale pie

The other night, I made Kale Pie. My friend Maria recommended it and I bought the ingredients but then they just sat in the fridge. I wanted to make it, but PIE? Who has time to make pie in the dinner rush? Turns out, this comes together quickly -- and you get to enjoy the smell of rosemary wafting through the air while its baking! I will admit, I was a little worried the kids wouldn’t like the kale pie. And my 17-year-old son has quite an appetite. I needed a back-up plan. I usually have ...

I Have Super Bowl Soup!

January 30, 2015 By Denise Costello

Hello Healthy Eaters! I know I'm popping in during the last quarter, but I had to share this yummy recipe. It would be great to serve during the Super Bowl. I like to offer some sort of soup or stew because it's an easy way to slip in some veggies and can be made ahead of time, so I can enjoy the game, too! My goal was to create a dish that felt like you were eating something indulgent and not "healthy". Tested out by son Patrick -- it got a big thumbs up! So put away the chicken wings ...

Our Favorite Thanksgiving Sides

November 20, 2014 By Denise Costello

Roasted-Vegetables-with-Dates

Love the simplicity of Thanksgiving: gathering around the table with family and friends to recognize our blessings and give thanks. No gifts, just a basic meal of turkey, vegetables and of course, pie! And the best part of Thanksgiving? Everyone can contribute -- by bringing a side dish, making dessert or to helping clear the table. A special bond is created when we come together and share. And who doesn’t like a little help in the kitchen? So in the spirit of Thanksgiving, the members of The ...

Labor Day Menu

August 27, 2014 By Denise Costello

end of summertime

Labor Day weekend means it’s the end of summer :( Although it was fantastic, I have to confess that I am looking forward to September. I actually think it’s one of my favorite months - the weather, sense of a fresh start, and the overflowing bounty of fruits and vegetables found at the farmers market. Right about now, you may be tired of the burger and potato salad scene and ready to try something new. Is the crazy schedule of getting everyone ready for school making it hard to plan for your ...

A Side Dish for Memorial Day

May 21, 2014 By Denise Costello

Amy is celebrating all that May has to offer this week, including a delicious new carrot salad. Eat well! -- Denise May brings Memorial Day, the beginning of the summer cookout season. Did you know that May is also Celiac Awareness Month? To celebrate, my family and I had dinner at Burton’s Grill. When you have family members with allergies or food sensitivities, eating out can be both challenging and intimidating. With Burton’s, I love that we never feel like we are being difficult ...

Easter Brunch Starters

April 16, 2014 By Denise Costello

refreshing drink

One of my favorite pleasures in life is gathering with the family to celebrate the holidays. Getting everyone around the table and enjoying a beautiful, delicious meal is pure heaven to me :) Growing up in Indiana, Easter was always a welcome celebration after the quiet, reflective period of Lent and the grey of winter.  Following Easter mass, we would gather with all our cousins and attend a big Easter brunch hosted my grandmother. Excited to be wearing a new spring outfit, eating jelly beans ...

Heart-Healthy Entertaining

February 20, 2014 By Denise Costello

It’s snowy here in the Northeast and we tend to be cooped up inside. I love it in the beginning--it gives me time to be in the kitchen to try new recipes. But after awhile, I like to spend time around a table with friends and family. Last night, in honor of Heart Health Month, I prepared Maple-Glazed Salmon with Pineapple and Maple Vinaigrette. It is a family favorite and so simple and tasty. It’s even good enough to serve to guests :) In addition to being tasty, here is another reason I like ...

A Holiday Fondue Tradition

December 20, 2013 By Denise Costello

Parsley Dip Recipe

The Christmas holiday for my family is about celebrating the birth of our Lord and gathering family around the table with food and cheer. It is a joyous occasion, but for those who have recently lost a family member, it can be difficult time. I lost my parents within 8 months of each other. They were in their early 70’s and healthy, so it was quite a blow to our family. The first Christmas without them was very painful, sitting at the dining room table gazing at the two empty chairs. The ...

Gluten-Free Holiday Cookies

December 12, 2013 By Denise Costello

Gluten-free cookies sample

Amy plunges into gluten-free cookies this week. Who could say no to that? -- Denise The winter holidays are all about tradition. Whether your family hails from Italy or India or Israel, how we celebrate is passed down from one generation to the next. This is especially true when it comes to food. Christmas without gingerbread, Hanukkah without latkes, or Diwali without gulab jamun? Just not the same! When you are gluten-free, those traditions often need to change, sometimes in simple, ...
