2 cups grated carrots
¼ cup shredded coconut
¼ cup slivered or sliced almonds, raw or toasted
Dressing
¼ cup grape seed mayonnaise (Vegenaise) or regular mayo if you can’t find it
1 Tbs lime juice
1 Tbs honey or brown rice syrup
Grated fresh ginger, to taste
Fresh cilantro, chopped, to taste
Pinch salt
Instructions
Simply mix together salad ingredients and toss with dressing.
