Quick, impressive and delicious! Try switching out the pork tenderloin with turkey or chicken. The grapes in the compote help to reduce the sugar content found in traditional cranberry chutneys.

Ingredients
2 small pork tenderloins
¼ cup olive oil
2 Tbs ground coriander
2 Tbs coarse salt
1 Tbs black pepper
2 tsp dried crushed red pepper
1 tsp ground cumin
Instructions
Preheat oven to 450 degrees. Rub spice rub over two pork tenderloins. Place tenderloin on a rack in a shallow roasting pan. Roast about 20-25 min until meat thermometer reads 150-155.
Let pork stand loosely Covered with foil for about 5-10 minutes. Slice and serve with Cranberry Grape Compote.
