Spiced Rubbed Pork Tenderloin

Quick, impressive and delicious! Try switching out the pork tenderloin with turkey or chicken. The grapes in the compote help to reduce the sugar content found in traditional cranberry chutneys.

  • 2 small pork tenderloins
  • ¼ cup olive oil
  • 2 Tbs ground coriander
  • 2 Tbs coarse salt
  • 1 Tbs black pepper
  • 2 tsp dried crushed red pepper
  • 1 tsp ground cumin
Instructions
  1. Preheat oven to 450 degrees. Rub spice rub over two pork tenderloins. Place tenderloin on a rack in a shallow roasting pan. Roast about 20-25 min until meat thermometer reads 150-155.
  2. Let pork stand loosely Covered with foil for about 5-10 minutes. Slice and serve with Cranberry Grape Compote.
