Avocado and Watermelon Salad with Jalapeño-Lime Dressing

Ingredients
Organic romaine hearts, chopped
2 avocados, cut into ½” pieces
2 cups watermelon, cut in ½” dice
2 Tbs purple onion, finely chopped
1 jalapeno, seeds and ribs removed, flesh minced
3 Tbs fresh cilantro, finely chopped
Juice of 2 limes
¼ cup extra-virgin olive oil
½ Tbs honey (local is best – look for it at Pairings Wine and Food in Winchester)
Instructions
In a small bowl combine jalapeno, cilantro, lime juice, olive oil, and honey.
Whisk until well combined, and taste for seasoning. If the dressing seems too acidic, add more olive oil. If it seems too oily, add a splash of rice wine vinegar or more lime juice. In a large bowl combine the avocado, watermelon, onion, and lettuce.
Toss with dressing right before serving.
