Middle-Eastern Chopped Salsa
- 1 cucumber, chopped
- 1 pint of grape tomatoes, chopped
- 2 scallions, chopped
- 1 yellow pepper, chopped
- ¼ cup Kalamata olives, pitted and chopped
- ¼ cup parsley, chopped
- Salt and pepper to taste
- Dressing
- 3 Tbs fresh lemon juice
- 2 Tbs Olive oil
- Mix salad ingredients together. Whisk dressing ingredients together. Pour dressing over salad and toss.
- Serve with Homemade Pita Chips or over torn romaine lettuce leaves
