Cantaloupe and Avocado Salad with Honey-Lime Dressing

Ingredients
  • 3 Tbs fresh lime juice
  • 1 tsp lime zest (optional)
  • 4 tsp honey
  • 1 Tbs plus 2 tsp extra-virgin olive oil
  • ½ tsp coarse kosher salt or sea salt
  • 1 cantaloupe, quartered and seeded, and cut into ½" dice
  • 1 avocado, halved, pitted and cut into ½" dice
  • 1 cup grape tomatoes, halved
Instructions
  1. Whisk together lime, oil, honey, salt and even zest some of the lime rind if you like for a little extra zing.
  2. Put cut fruit into bowl.
  3. Add dressing to taste and enjoy!
