Ingredients
  • 1 medium roasted beet (4 oz.) see Notes below
  • 1 apple
  • 1 cup of spinach
  • ½ cup almond, coconut, rice, or hemp milk, or water
  • 1 Tbs lemon juice
  • Honey to taste, optional
  • 2 ice cubes
Instructions
  1. Wrap beet in foil and roast in a 400°F oven 1 hour, or until tender. Remove from oven. As soon as beet is cool enough to handle, remove foil, slip off and discard skin, and slice in half. Stash ½ in the refrigerator for later; cut remaining ½ beet into large chunks.
  2. Combine beet and all other ingredients in a blender; blend on high until smooth.
