Family Valentine Dinner

How did you spend your Day of Love?

Yes, I know Valentine’s Day has been commercialized, but  it is still a day to celebrate LOVE.  I don’t just mean the romantic feeling of love but fact that we are all made from love, God’s love.  We are love to the very core. It is  part of our natural state.

However, sometimes when we let our fears, anger, jealousy, or pride pull us away from that natural state, it can get in the way of our love for others and even ourselves. So, although the day was forced upon you,  perhaps  you took advantage of it as a reason to  dip into your heart and spread your love.  What happened?  How did you feel?

A goal for me is to try to go through my days with a Valentine frame of mind and  let go of the things that can cloud my love.  Great things can happen in your own heart and the heart of others when you spread it around 🙂

Roasted Beet Hummus

A simple start in sharing your love begins with preparing a nourishing dinner for your family.  What a gift!

This is the Valentine Dinner that I prepared for my family last night.  Healthy, simple and comforting.

To start, we had Roasted Beet Hummus made with beets, garlic and cannelloni beans: so simple and colorful — perfect for Valentine’s Day as well as for your ticker.

 

Main Course

Oven-Roasted Sweet Potato Wedges with Garlic

For the main course –  my Heart-Shaped Meatloaf.  This healthy meatloaf was created for my kids in 2008 and has been our Valentine fave for years. I like to pair this with Oven-Roasted Sweet Potato Wedges, baked with garlic and coconut oil.  The coconut complements the sweet potato, not to mention adding a nutritional punch.

 

Mixed Greens Salad with Pomegranate and Orange Recipe

For the Greens, we had a Romaine Lettuce Salad with Apple and Cider Vinaigrette Dressing.

 

Dessert Course

Chocolate Pudding with Fresh Berries

Of course, no Valentine’s Day meal would be complete without dessert. To make sure everyone left the table happy, we had two choices on our menu: Chocolate Pudding with Fresh Berries and Raw Cacao Truffles.
Something for the chocolate lover in all of us and heart-healthy, too.

The perfect Valentine’s meal: colorful, tasty and full of love for our bodies. What could be better?
