Cantaloupe and Avocado Salad with Honey-Lime Dressing

Ingredients
- 3 Tbs fresh lime juice
- 1 tsp lime zest (optional)
- 4 tsp honey
- 1 Tbs plus 2 tsp extra-virgin olive oil
- ½ tsp coarse kosher salt or sea salt
- 1 cantaloupe, quartered and seeded, and cut into ½" dice
- 1 avocado, halved, pitted and cut into ½" dice
- 1 cup grape tomatoes, halved
Instructions
- Whisk together lime, oil, honey, salt and even zest some of the lime rind if you like for a little extra zing.
- Put cut fruit into bowl.
- Add dressing to taste and enjoy!
