Avocado and Watermelon Salad with Jalapeño-Lime Dressing
Ingredients
- Organic romaine hearts, chopped
- 2 avocados, cut into ½” pieces
- 2 cups watermelon, cut
in ½” dice - 2 Tbs purple onion, finely chopped
- 1 jalapeno, seeds and ribs removed, flesh minced
- 3 Tbs fresh cilantro, finely chopped
- Juice of 2 limes
- ¼ cup extra-virgin olive oil
- ½ Tbs honey (local is best – look for it at Pairings Wine and Food in Winchester)
Instructions
- In a small bowl combine jalapeno, cilantro, lime juice, olive oil, and honey.
- Whisk until well combined, and taste for seasoning. If the dressing seems too acidic, add more olive oil. If it seems too oily, add a splash of rice wine vinegar or more lime juice. In a large bowl combine the avocado, watermelon, onion, and lettuce.
- Toss with dressing right before serving.
