- 3 ripe avocados
- ½ cup red onion, finely diced
- ½ jalapeno pepper, seeded and finely chopped, to taste
- ½ cup cilantro, coarsely chopped
- 2 Tbs fresh lemon juice
- 1 tsp coarse salt, to taste
- Cut each avocado in half and remove the pit.
- Scoop out the halves and place in a medium bowl.
- Mash the avocado with a fork and stir in the onion, tomatoes, chiles and cilantro.
- Season the mixture with lime juice and salt.
- Cover with plastic wrap until ready to serve.
