Exotic Carrot Salad

So refreshing and colorful – this is definitely going on my Thanksgiving table!
Ingredients
- 2 cups grated carrots
- ¼ cup shredded coconut
- ¼ cup slivered or sliced almonds, raw or toasted
- Dressing
- ¼ cup grape seed mayonnaise (Vegenaise) or regular mayo if you can’t find it
- 1 Tbs lime juice
- 1 Tbs honey or brown rice syrup
- Grated fresh ginger, to taste
- Fresh cilantro, chopped, to taste
- Pinch salt
Instructions
- Simply mix together salad ingredients and toss with dressing.
