Hello Healthy Eaters!
I know I’m popping in during the last quarter, but I had to share this yummy recipe. It would be great to serve during the Super Bowl.
I like to offer some sort of soup or stew because it’s an easy way to slip in some veggies and can be made ahead of time, so I can enjoy the game, too! My goal was to create a dish that felt like you were eating something indulgent and not “healthy”.
Tested out by son Patrick — it got a big thumbs up! So put away the chicken wings and try this Quick Buffalo Chicken Soup instead 🙂
Hope you enjoy this soup! It would also be great to use on a busy week night to warm the body. We still have plenty of winter left, after all 🙂
