Vegan Roasted Parsnip Hummus

parsnipI am a big fan of hummus spreads. They are great for serving at a party, and as an everyday snack or sandwich spread.

It’s Sunday and friends are gathering in my home to watch the Patriots Game. I usually like to offer a healthier dips or two  to balance the not so healthy choices that folks enjoy:)

I saw a recipe for Parsnip hummus and had to try it! For two reasons- First, I love the sweet, creaminess of roasted parsnips- yum! Secondly, love the fact that they are a great source of soluble and non soluble fiber. This helps to reduce blood cholesterol levels, and when  your in your 50’s like me, finding a simple tasty recipe with heart protecting veggies is a big score! So with at few adjustments, here is my take- off on the traditional chickpea hummus infused with parsnip goodness.
