Karina’s Vinaigrette

Ingredients
- • 6 Tbs extra virgin olive oil
- • ½ lemon, juice
- • 1 Tbsp white wine vinegar
- • 2 tsp seeded mustard
- • 2 tsp Dijon mustard
- • Salt & pepper
Instructions
- Put all ingredients in a jar with a lid and give a good shake. Dress salad just before serving.

Try keeping salad sides raw for maximum nutrients, crunch & less washing up. My master vinaigrette can be easily tweaked to make three different salads - Classic Slaw (Low Calorie Style); Baby Potato Salad with Mustard Dressing; and Asparagus, Cherry Tomato & Avocado Salad.
