I can’t stop eating this! So fresh and perfect on this humid 90 degree day!
Ingredients
  • 1 Cucumber Chopped
  • 1 pint of grape tomatoes chopped
  • 2 scallions chopped
  • 1 yellow pepper chopped
  • ¼ cup pitted Kalamata olives chopped
  • ¼ cup parsley chopped
  • Salt and pepper to taste
Instructions
  1. Mix all chopped ingredients together.
  2. Mix together 3TBS fresh lemon juice and 2 TBS Olive oil and pour into the chopped vegetables.
  3. Serve with whole grain tortilla chips.
