Middle Eastern Chop Salad

I can’t stop eating this! So fresh and perfect on this humid 90 degree day!
Ingredients
- 1 Cucumber Chopped
- 1 pint of grape tomatoes chopped
- 2 scallions chopped
- 1 yellow pepper chopped
- ¼ cup pitted Kalamata olives chopped
- ¼ cup parsley chopped
- Salt and pepper to taste
Instructions
- Mix all chopped ingredients together.
- Mix together 3TBS fresh lemon juice and 2 TBS Olive oil and pour into the chopped vegetables.
- Serve with whole grain tortilla chips.
