Beet Treat

Serves 1
Ingredients
- 1 medium roasted beet (4 oz.) see Notes below
- 1 apple
- 1 cup of spinach
- ½ cup almond, coconut, rice, or hemp milk, or water
- 1 Tbs lemon juice
- Honey to taste, optional
- 2 ice cubes
Instructions
- Wrap beet in foil and roast in a 400°F oven 1 hour, or until tender. Remove from oven. As soon as beet is cool enough to handle, remove foil, slip off and discard skin, and slice in half. Stash ½ in the refrigerator for later; cut remaining ½ beet into large chunks.
- Combine beet and all other ingredients in a blender; blend on high until smooth.
